That's where the Hunter's Journal comes, as it will actually document and log all the information about every enemy or interesting thing you come across in this world. You can encounter them pretty much anywhere in the dangerous world of Hallownest, and while they're all interesting in their own right and require different ways of taking them down, keeping track of all of them can be difficult.
There are a lot of enemies in Hollow Knight - over 150, in fact.
